You will definitely scare up some oohs and ahhs with this divine Halloween cupcake. Moist and chocolatey, it’s topped with a wicked orange cream cheese frosting.

Makes 12 cupcakes


2½ cups all-purpose flour
2 tablespoons all-purpose flour
1 cup good-quality cocoa
2 tablespoons good-quality cocoa
1 tablespoon baking powder
1½ teaspoon baking soda
2¼ teaspoons ground cinnamon
¾ teaspoon fresh-grated nutmeg
¾ cup buttermilk
1½ cup pumpkin purée
1½ teaspoons vanilla extract
2 ¼-inch stick unsalted butter
1½ cups dark brown sugar
1½ cups granulated sugar
5 large eggs

Preheat oven to 375 degrees. Line a 12-cup muffin tin with cupcake liners. Sift the flour, cocoa, baking powder, baking soda, cinnamon and nutmeg in a large bowl and set aside.

Combine the buttermilk, pumpkin, and vanilla in a medium bowl and set aside. Beat the butter and sugar together in a large bowl until fluffy. Add eggs, one at a time, beating well after each addition until the mixture is smooth and light.

Next, add the flour mixture and buttermilk mixture, alternating and blending well after each addition. Scoop (or spoon) batter into prepared tin(s). Fill each with 1/4 cup of batter. Bake until a toothpick inserted in the centre of a cupcake comes out clean – about 22 minutes.

Transfer cupcakes to a wire rack to cool completely. Use an offset spatula or butter knife to spread icing over tops. Sprinkle coloured decorating sugars or decorate as desired.

Orange Cream Cheese Frosting


1 package cream cheese
¼ cup unsalted butter
1 tablespoon fresh orange juice
1 teaspoon grated orange zest
½ teaspoon pure vanilla extract
4 cup confectioners' sugar
¼ teaspoon orange food colouring


Blend the cream cheese, butter, orange juice, orange zest and vanilla in a large bowl until smooth. If using an electric mixer, set at medium speed.

Add the sugar and continue to beat for about 3 more minutes until light and creamy. Add food colouring and gently stir to create a uniform colour throughout.
